Most people are aware of the healthy fibre and starch content in potatoes, but they don’t always consider the highly nutritious protein fraction.
Branston is working alongside B-hive Innovations as part of a collaborative project to improve potato crop utilisation. We’ll be converting low-value potatoes into clean-label functional protein, which is ideal for use in vegetarian and vegan foods. We’ll also be generating starch-based products for a range of manufacturing applications.
