Tasty bacon & herb mashed potato

Cooking time: 45-50 minutes
Serves 2

What you’ll need:

  • 3 large potatoes - try Desiree or Maris Piper
  • 30g butter
  • 25ml milk
  • 25ml cream
  • 1tsp English mustard
  • Salt and pepper
  • 6 spring onions or 1 bunch of chives
  • 3 rashers of grilled bacon
  • 1/2 cup of grated cheddar

What to do:

  1. Peel and steam the potatoes for 20 minutes or until cooked.
  2. While the potatoes are cooking, cut grilled bacon into pieces and set aside.
  3. Chop the spring onions or chives.
  4. Add the cream, milk and onions or chives to a saucepan. Gently warm on a low heat for 5 minutes then set aside to simmer.
  5. Once the potatoes are cooked, drain the excess water. Mash, adding in the cream and milk mixture, and then fold in the bacon.
  6. Season with salt and pepper and serve.
