Potato hash
This tasty and filling US-style dish is great served for a relaxed weekend brunch. Delicious topped with a poached egg.
Serves 2-3
What you’ll need:
- 2 potatoes, peeled, cut into chunky dice, lightly boiled/steamed
- 1 sweet potato, cut into chunky dice, lightly boiled/steamed
- Half an onion, peeled and finely chopped
- 2-3 rashers streaky bacon, chopped
- 2-3 cloves garlic, peeled and crushed
- 5-6 fresh sage leaves, finely chopped
- 1-2 tablespoons oil
- Sea salt and black pepper to taste
What to do:
- In a large non-stick frying pan gently fry the bacon to render the fat out for a couple of minutes.
- Add the onions, garlic and a tablespoon of olive oil and gently fry for 10 minutes.
- Turn up the heat and add the potatoes, sweet potatoes and sage. Fry for around 10 minutes, tossing occasionally to cook evenly. (You may need to add a little more olive oil to stop the sweet potatoes sticking.)
- When the potatoes are crisp and golden brown, season to taste and serve.
