Potato hash

This tasty and filling US-style dish is great served for a relaxed weekend brunch. Delicious topped with a poached egg.

Serves 2-3

What you’ll need:

  • 2 potatoes, peeled, cut into chunky dice, lightly boiled/steamed
  • 1 sweet potato, cut into chunky dice, lightly boiled/steamed
  • Half an onion, peeled and finely chopped
  • 2-3 rashers streaky bacon, chopped
  • 2-3 cloves garlic, peeled and crushed
  • 5-6 fresh sage leaves, finely chopped
  • 1-2 tablespoons oil
  • Sea salt and black pepper to taste

What to do:

  1. In a large non-stick frying pan gently fry the bacon to render the fat out for a couple of minutes.
  2. Add the onions, garlic and a tablespoon of olive oil and gently fry for 10 minutes.
  3. Turn up the heat and add the potatoes, sweet potatoes and sage. Fry for around 10 minutes, tossing occasionally to cook evenly. (You may need to add a little more olive oil to stop the sweet potatoes sticking.)
  4. When the potatoes are crisp and golden brown, season to taste and serve.
