Smiley potato faces

Cooking time: 40 minutes
Makes 4-6 cakes

What you’ll need:

  • 3 large potatoes - Desiree would be good
  • 1/4 cup frozen peas
  • 1/4 cup of sweetcorn
  • 50g cheddar cheese
  • 25g butter
  • 1 egg yolk

What to do:

  1. Peel and steam the potatoes until cooked.
  2. Meanwhile, boil the peas and sweetcorn and then leave to one side.
  3. Grate the cheese.
  4. Once the potatoes are cooked, pour into large mixing bowl. Add the butter, egg yolk and half of the cheese. Mash gently with a fork.
  5. Add the sweetcorn and most of the peas to the potato, leaving a handful for decoration. Season to taste and mix.
  6. Pre-heat the grill to medium-hot.
  7. Lightly flour your hands and pat the potato mixture into palm-sized balls. Place on a baking tray to form cakes about 2cm thick.
  8. Place under the grill for 4-5 minutes to brown.
  9. When the potato cakes are ready, use remaining peas and cheese to create smiley faces, and serve.
