Smiley potato faces
Cooking time: 40 minutes
Makes 4-6 cakes
What you’ll need:
- 3 large potatoes - Desiree would be good
- 1/4 cup frozen peas
- 1/4 cup of sweetcorn
- 50g cheddar cheese
- 25g butter
- 1 egg yolk
What to do:
- Peel and steam the potatoes until cooked.
- Meanwhile, boil the peas and sweetcorn and then leave to one side.
- Grate the cheese.
- Once the potatoes are cooked, pour into large mixing bowl. Add the butter, egg yolk and half of the cheese. Mash gently with a fork.
- Add the sweetcorn and most of the peas to the potato, leaving a handful for decoration. Season to taste and mix.
- Pre-heat the grill to medium-hot.
- Lightly flour your hands and pat the potato mixture into palm-sized balls. Place on a baking tray to form cakes about 2cm thick.
- Place under the grill for 4-5 minutes to brown.
- When the potato cakes are ready, use remaining peas and cheese to create smiley faces, and serve.
