Potato wedges
What you’ll need:
- 2 large potatoes (or more if you’re hungry)
- A splash of sunflower oil
What to do:
- Pre-heat your oven to 180°c
- Cut the potatoes into 6-8 even-sized wedges and pat dry with kitchen roll to remove excess starch
- Coat the wedges with the oil and place on a baking tray
- Bake for 45-50 minutes, turning once or twice so they brown evenly
Good varieties to use:
Marfona, Estima, Maris Piper, Desiree
Top tip:
Sprinkle with spices to add some zing

I 'steam fry' my wedges for a few minutes each side in a big lidded saute pan first. It means they cook in the oven much more quickly.

I like to sprinkle some carraway seeds on my wedges. The carraway seeds can be ground first if you don't like them too crunchy. I find the slight sweetness goes really well with fish.
