Potato wedges

What you’ll need:

  • 2 large potatoes (or more if you’re hungry)
  • A splash of sunflower oil

What to do:

  1. Pre-heat your oven to 180°c
  2. Cut the potatoes into 6-8 even-sized wedges and pat dry with kitchen roll to remove excess starch
  3. Coat the wedges with the oil and place on a baking tray
  4. Bake for 45-50 minutes, turning once or twice so they brown evenly

Good varieties to use:

Marfona, Estima, Maris Piper, Desiree

Top tip:

Sprinkle with spices to add some zing

  • I 'steam fry' my wedges for a few minutes each side in a big lidded saute pan first. It means they cook in the oven much more quickly.

  • I like to sprinkle some carraway seeds on my wedges. The carraway seeds can be ground first if you don't like them too crunchy. I find the slight sweetness goes really well with fish.
